Do you like fresh carrot juice?
I make mine in centrifugal juicer from approx 1 kg of carrots, 1-2 apples and half lemon. Also add ginger or turmeric. Drinking a glass of fresh carrot juice in the morning makes my body sing JOY.
Leftover apple/carrot apple pulp makes a great ingredient for my today treat:
Crunchy CARROT- apple – CINNAMON DELIGHT
INGREDIENTS:
Carrot and apple pulp from juicing
Raw almond flakes
Cinnamon
Ripe banana
optional: Agave sirup and Raw shredded coconut
Tools :
Dehydrator (Excalibur)
Bowl
PROCESS:
Mix all ingredients in the bowl (that’s easiest done with the hands) until cinnamon and coconut oil are distributed evenly.
Place on silicon sheet of dehydrator tray in thin layer.
Place in dehydrator,
I set mine on 115°F and approximately eight hours of time.
Dehydrate until you like the crunchiness.
Store in the fridge in airtight container.
Carrot is rich in vitamins (vitamin A, provitamin BETA CAROTENE, ALPHA CAROTENE, vitamin C, vitamin K), minerals (potassium, calcium), antioxidants such as LUTEIN, ZEAXANTHIN, LYCOPENE in red and ANTHOCYANIN in purple carrots.
Raw carrots are a wonderful low-calorie high-fiber food, have low glycemic index.
